Welcome all! Papa G here. Today I presentfrozen Banana Daiquiris. If you can't go to the Caribbean, why not bring theCaribbean to you? These refreshing, adult beverages haveless than two net carbs per a 8 ounce serving and are just the thing to helpbreak up that shelter-at-home monotony. Let's get started. Add one can ofunsweetened coconut milk to a mixing bowl. Flavor with some banana extract; andsome color with some yellow food coloring gel. The food coloring isoptional, but does add that banana look. Mix well to combine. There are a coupleof ways to freeze this mix. I like to use a freezer bag. This method allows foreasier placement in the freezer; especially if it's on the full side likemine. I'll show you another option in just a bit. Simply pour the mix into thebag. Seal. And place in the freezer for one to two hours, or until frozen. We'llmake a simple syrup by adding equal parts of water and a granulated sugarsubstitute to a sauce pot on medium heat. Stir with a whisk until dissolved. Itshould dissolve fully without coming to a boil, or getting too hot. Any sugarresidue on the surface will clear up as it cools to room temperature. Pour thecooled, simple syrup into a two cup container, like this measuring cup. Add ahalf a cup of clear rum and stir to combine. Cover with some plastic wrap andplace in the refrigerator to chill while the banana mix freezes. Remove the frozenbanana mix and break it up a bit using a kitchen hammer or rolling pin. If youhave room in your freezer, freezing in these silicone molds will make removingthe banana mix a little less work, but what fun is that? Add our banana mix to a blender. Pour inour sweetened rum and blend to mix. Now, add two cups of ice and blend untilsmooth. Pour into an 8 ounce glass. Garnish witha little fun... and enjoy! There you have it folks!
